The Challenge

Bread Surplus is a Challenge

20,000

26,000
tonnes CO₂ / year
equivalent wasted for surplus bread production in Denmark alone
€2.8bn
EUR / year
economic value lost to bread waste each year across the EU

That corresponds to one loaf wasted per week per Copenhagen and Aarhus inhabitant — combined.

Our Story

A World Without
Bread Waste

Our mission is to transform surplus bread from local bakeries into refreshing, low-sugar, non-alcoholic beverages — enabling circular local value chains and making sustainability delicious.

While kvass has centuries of tradition in Eastern Europe, Nordic Kvass is something new: a commercially scalable, surplus-bread-based fermented drink produced locally, sold locally, and designed to keep value circulating within communities.

1

Collect Surplus Bread

2

Ferment Locally

3

Nordic Kvass is Ready

Non-alcoholic, low-sugar, fibre-rich — with a Nordic twist from local seasonal ingredients.

4

Sold Where it was Made

Distributed back to the bakeries, restaurants, and cafés in the same community.
